Bursting with flavor, satisfying and versatile... French onion soup and meatballs will certainly not disappoint!
SERVES 6–8
- 3 large onions, sliced
- 3 Tbsp olive oil
- 3 Tbsp flour
- 8 cups water
- 2 Tbsp onion soup mix
- 3 Tbsp kosher salt
- 1⁄2 tsp black pepper
- 2 Tbsp lemon juice
MEATBALL MIXTURE
- 1 lb (450 g) ground beef
- 1 small red onion, finely diced
- 1 clove garlic, crushed
- 1 egg
- 1⁄2 cup seasoned bread crumbs
- 1⁄4 cup pareve milk
- 1⁄2 tsp salt
- 1⁄4 tsp pepper
Combine all meatball ingredients in a large bowl and set aside. Place sliced onions and oil in an 8-quart pot over medium-high heat. Sauté until golden (around 15 minutes), stirring occasionally. Add the flour and stir until it becomes a roux. Add the water and stir until smooth. Add the onion soup mix, kosher salt, pepper, and lemon juice. Bring the soup to a boil.
Form small, nickel-sized balls out of the meatball mixture and drop into the soup. Lower heat and allow to cook for 30 minutes.
