Grilled Sesame Chicken

This marinade is simple and basic with just the right amount of flavor to keep grilled chicken a long way from boring. The mayonnaise keeps it soft and juicy while the sesame seeds add a refreshing nuttiness and unexpected burst of originality. Pair this chicken with some grilled corn on the cob and a hearty spoonful of coleslaw, and you’ve got yourself a gorgeous plate.

SERVES 4-6

 

1 lb (450 g) chicken cutlets, pounded thin

¼ cup mayonnaise

1 Tbsp toasted sesame oil

1 Tbsp honey

1 Tbsp lemon juice

1 tsp onion powder

1 tsp soy sauce

1 tsp yellow mustard

2 Tbsp sesame seeds

2 scallions, sliced, plus more for garnish

salt and pepper, to taste

 

Combine all ingredients (besides the chicken) until a thick marinade is formed. Pour it into a plastic bag together with the chicken. Mix it around to coat the chicken and allow to marinate for at least 1 hour, up to overnight.

Preheat grill to high heat.

Grill the chicken for 2–3 minutes on each side. Serve with extra scallions on top.
